Lolly Cake Cheesecake recipe

Lolly Cake is a kiwi staple and cheesecake is awesome so why not Lolly cake Cheesecake!

Lolly Cake Cheesecake - Recipe


Base –

90g Butter

100ml Sweetened Condensed milk

1 1/4 c Malt biscuits –¬†crushed

170g Eskimo Lollies – chopped

Filling –

2 x containers of Philadelphia Spread

1/4 Caster Sugar

2 Tsp Gelatine (dissolved in hot water)

500g Cadbury Milk Chocolate – melted

1 C thickened cream (lightly whipped)

Remaining Eskimo Lollies to decorate top

  1. Mix butter and Sweetened Condensed milk then stir over low heat until melted and combined.
  2. Mix butter and milk with malt biscuits and chopped eskimo lollies,
  3. Press into the bottom of a springform circular tin, leave to chill.
  4. Beat Philadelphia and Sugar until mixed, then add Gelatine. Stir in melted chocolate.
  5. Fold in cream into the mixture.
  6. Pour mixture over the base and then chill for 2 hours.
  7. Decorate with remaining Eskimos and drizzle chocolate over the top.
